SPRING VEGETABLE CHEESE PIE

4 eggs, beaten
1 1/2 cups milk
1 cup (4 oz.) shredded Swiss cheese 1 package Knorr Spring Vegetable Soup and Recipe Mix
1 package (10 oz.) frozen chopped spinach, thawed and squeezed dry
1 frozen (9-inch) deep dish pie crust

Preheat oven and a cookie sheet to 375°. In large bowl combine first five ingredients. Spoon into pie crust. Bake on cookie sheet 50 minutes or until knife inserted comes clean.

Use bunch fresh chopped spinach. Can use puff pastry or Pillsbury deli pie crust. Also good with chopped zucchini and peppers and cheddar cheese.
