ULTIMATE CHOCOLATE COOKIES

1 12-ounce package semisweet chocolate chips (2 cups)
2 ounces unsweetened chocolate
2 tbsp. butter
1/4 cup flour
1/4 tsp. baking powder
dash salt
2 eggs
2/3 cup sugar
1 tsp. vanilla
1 cup chopped nuts (optional)
4 ounces semisweet chocolate, melted (optional)*

Lightly grease (or use parchment) cookie sheet. In heavy medium saucepan combine 1 cup chocolate chips, unsweetened chocolate and better. Cook and stir over low heat until melted, cool slightly. Meanwhile, stir dry ingredients together and set aside. Add eggs, sugar and vanilla to chocolate mixture. Beat until combined. Add flour mixture, beat until combined. Stir in remaining chocolate and nuts. Drop by teaspoon onto cookie sheet. Bake 350° for 8 to 10 minutes or until edges are firm and surface is dull and cracked. Cool. Drizzle melted chocolate on top.

Notes: I stopped making them this way because they’re too sweet and they can’t be packed for gifting. I don’t bake them any longer than 6 minutes. Add chopped Andes mints.
